Xmas Dinner

Have you thought yet of what to prepare for Xmas dinner? There is no use in having a lovely decorated table with our Christmas dinnerware if you have nothing to serve on it! Spiced Cider

What a great way to warm up during the Holiday season! This Christmas welcome your guests with a spicy, warm cider.

2 oranges
60 whole cloves
2 (6 ounce) cans frozen apple juice concentrate, thawed
3 1/2 cups water
4 (2 inch) sticks cinnamon sticks

Cut each orange into 10 slices. Place 3 cloves into each slice.
Combine apple juice concentrate and water in a slow cooker. Add oranges and cinnamon sticks. Cook on HIGH for 25 minutes, or until warm.

Mustard Rib

An easy holiday recipe to serve as main dish for Xmas dinner. The smell of this roast in mustard will wake up everyone's appetite!

1 (10 pound) prime rib roast
6 cloves garlic, sliced
salt and ground black pepper to taste
1/2 cup Dijon mustard

Preheat the oven to 500 degrees F (260 degrees C).
Make slits all over the roast by pricking with a small knife. Insert slivers of sliced garlic. Season the roast with salt and pepper, then spread generously with mustard. Place on a rack in a roasting pan, and cover.
Roast for 60 minutes in the preheated oven. Turn off oven. Leave oven closed, and do not peek for 90 minutes. The internal temperature of the meat should be at least 140 degrees F (60 degrees C) for medium-rare, or 155 degrees F (68 degrees C) for medium.


Christmas Cake

No one will want to skip dessert. This cake is the best way to end your Xmas dinner. If some is left after the party you'll have a great energetic breakfast to begin the next day. Treat yourself! You really deserve it, after all that holiday shopping and party planning.

12 oz Self Raising Flour
1 teaspoon Mixed Spice
4 oz Ground Almonds
8 oz Butter
8 oz Caster Sugar
4 Eggs beaten with 8 tablespoons Milk
(or 1/2 Milk and Brandy)
8 oz Currants
8 oz Sultanas
8 oz Raisins
4 oz Halved Glacé Cherries
4 oz Cut Mixed Peel

Sieve, together the flour, spice and ground almonds. Cream butter and sugar, stir in flour mixture and eggs with milk (alternately, a little at a time). Wash and add the fruit. Mix thoroughly.
Place the mixture in a greased and lined 9 inch / 23 cm round or 8 inch / 20 cm square tin. Protect the tin on the outside so it is 3 inches / 7.5 cm above the tin with brown paper or foil.
Bake in slow oven at 150°C / 300°F / Gas Mark 2 for about 4 1/2 hours. Cover the top of the cake after 3 hours with some foil. This stops it burning. You can check if it cooked by putting a skewer in the cake. If it is clean when it comes out, the cake is probably cooked, you can finally check by listening to it. If you can hear bubbling, it needs a bit longer!!
The cake needs to cool in its tin for at least 30 mins before going on to a cooling rack.
